A Legit Muffin Recipe and Other Shenans...

Happy Sunday Funday!

Weekend Workouts:

Friday-  5 glorious miles.  It was practically summer outside.

Saturday-  Cardio Trio-  1 mile sprint, 20 min. on the arc trainer, 15 min. on the guillotine.   Abs, planks, back.

Sunday-  5k on the dready- 24:12.   Body Pump.

 Songs You Guys Need Asap:

First things first…does anyone else hate that song "I'm Happy" that's basically #1 on the charts?   I don't understand.    I really don't.    How did this happen?   It makes me the opposite of happy.  

Okay, back to songs you guys need…

1.  Need to Breathe-  Streets of Gold

Love this.  Awesome chill song and I'm loving this band.

2.  Say Somthin-  Austin Mahone

This kid is basically 1D in disguise.  So obvi I only downloaded this for the 7 year old.  Obvi.  

3.  Always Summer-  Yellowcard

FAB running song.

4.  Headlights-  Eminem (feat. Nate Ruess)

I'm pretty much obsessed with this one for no real reason.  Other than it's awesome and I'm obsessed with Eminem lately.

So yeah, download these immeed.

Alright, let's talk about these legit muffins…

Clean Banana Walnut Muffins


3 eggs
1/2 c. coconut oil
2 medium bananas
4 dates, finely chopped
1/4 c.  coconut flour (could also use almond flour)
1/2 tsp sea salt
1/2 c walnuts


1. Place eggs, oil, bananas, and dates in Vitamix (or blender…if you're deprived of the Vitamix like me).   Blend on medium until combined.

2.  Add coconut flour and salt.   Blend until smooth.

3. Fold in walnuts

4.  Scoop into line muffin pans.  Blake 20-25 min. at 350

*The original recipe calls for added baking soda, which I left out.

Into the oven…

  Outta the oven…

These are dense.  And super filling..

If you want to die a slow death of happiness, warm one of these babies up in the mike and top with a little blob of almond butter and cinnamon.  Uh-mazing.

So yes, this would be a suitable snack for the second part of the 24 Day Challenge.   It's also technically Paleo friendly, so a win/win all around.

Put these on your list of things to do this week.  You won't be sorry.
